Delicious workshop by Daniele Pario Perra.

In deze workshop stond het idee van de keukentafel als centrale plaats voor gesprekken en uitwisseling centraal. De kunstenaar is een meester in het bereiden van pasta’s. Deze bereidingen hebben in Noord Italie een sterk cultureel en politiek karakter. In de keuken en aan de eettafel bespreekt men de laatste familie nieuwtjes, als ook de actuele politieke toestanden. Pario Perra leert de deelnemers in de workshop niet alleen de oude kooktechnieken toe te passen, hij vertelt ook over de diplomatieke betekenis van de verschillende kleuren sauzen en stelt gericht vragen over het collectieve Europese geheugen op het gebied van geschiedschrijvende gebeurtenissen en persoonlijke geschiedenissen.

The workshop started Saturday the 31st of January, around 1PM. About 15 participants joined the workshop.

Collective diner, around 7 PM.

1° hour

THEMES: Difference between pasta fresca and long conservation pasta

Importance of the eggs, meal, and water

The relation between Ragu’ and Pasta

2° - 3° hour

PREPARATION of the fresh pasta: meal, eggs, water, salt, olive oil

4° - 5° hour

PREPARATION of tortelloni

EXPRESS cooking & collective dinner

Pasta and Politics

From Mussolini to Communism, from Communism to Ferrari, from Ferrari to the new Communism...An important Region based on the big contrasts in the focus of Italian Culture & Politics. An old social tradition society with a good quality of life, and an enormous vitality. At its core is the renowned tradition of pasta, from tortellini to ragù Bolognese crossing hundreds of important recipes of the national cuisine. In this Region, all business, political strategies, and important moments of the public and private sphere, have been created around a table as a method. The place more suitable to trigger opinions & knowledge exchange. In the kitchen culture and food compete on the same pleasure level: from hard contrasts to perfectly amalgamate taste. In this way the workshop represent a pretext to start a spontaneous discussion we want to develop.

The workshop took place on the 31st of January at Noordkaap.

COSTS:

€ 25,- per person, for the workshop incl. diner and a tray filled with fresh pasta to bring home

€ 3,50, if youonly wish to join the diner (wine included)
